Cooked, baby lima beans develop a delicate, creamy texture with a mild, earthy flavor — lighter than their larger counterparts, but just as satisfying. And don't be fooled by their small size — they're still a key source of protein, fiber, & essential minerals!
To Cook: Sort* and rinse. (May contain traces of grain.) Soak 4 hours. Drain, add 3 cups of water to 1 cup beans. Simmer about 1 hour.
Suggestions:
1. Use in stews and casseroles.
2. Mash like potatoes.
3. An excellent source of iron and dietary fiber by themselves as a side dish!
