We’ll let you in on a little secret: SHILOH FARMS Organic Zante Currants are actually raisins in disguise! Derived from the ancient Black Corinth Grape, these tiny black beauties have an intense tart-sweet flavor perfect for baking.
An excellent source of Vitamins A and C, Zante Currants are one of the oldest known raisin varietals. In fact, they were once a prominent source of trade between merchants in ancient Greece! Because of this history, they are also occasionally referred to as "Corinth" or "Corinthian" raisins.
To Rehydrate: Cover 1 part fruit with 2 parts water or juice. Refrigerate 2-3 hours, or until fruit has absorbed the liquid and is plump to touch. Drain.
Suggestions:
1. Traditionally used in Irish soda bread, English scones, and mincemeat.
2. Sub for raisins or cranberries in quickbreads, muffins, and other baked goods. Because of their small size, they will be more evenly dispersed throughout the finished product.
3. Currants pair especially well with almonds and citrus.
4. Add flavor and texture to salads, pilafs, and roasted vegetables.

I have ben buying zante currants for my rye bread at Whole Foods, but these at Shiloh are fresher, less dried out, better tasting. Strong recomendation!
