Sweet Potato Black Bean Burgers with Quinoa
Yields 8 servings
Ingredients:
3 C. sweet potatoes, cooked and cubed (about 1.5 lbs)
2 C. Shiloh Farms Organic Black Soybeans or PureLiving Organic Sprouted Black Beans, cooked (about ⅔ C. dry)
1 Tbsp. olive oil
½ tsp. Shiloh Farms Himalayan Pink Salt
½ tsp. ground black pepper
1 tsp. ground cumin
1 tsp. chili powder
¼ tsp. cayenne
¾ C. onion, diced (about ½ medium onion)
2 large garlic cloves, minced
2 Tbsp. fresh cilantro, chopped
½ C. Shiloh Farms Organic Quinoa or PureLiving Sprouted Quinoa, cooked
⅓ C. Shiloh Farms Organic Rolled Oats, partially ground
2 Tbsp. Shiloh Farms Organic Pumpkin Seeds
Directions:
1. Preheat oven to 375°
2. In large bowl, mash together sweet potatoes and 1 C. of black soybeans until mixture has a paste-like consistency; stir in oil and seasonings (through cayenne)
3. Add onion, garlic, cilantro, quinoa, oats, pumpkin seeds, and remaining beans; stir until just combined
4. Divide mixture into 8 balls, then flatten into ½"-¾" patties
5. Place patties on lightly greased baking sheet and bake in preheated oven for 30 minutes, flipping half-way through
Tip: For added flavor, finish patties off in heated grill pan or skillet during last 5 minutes of cooking time.
6. Serve on a bed of lettuce or on a Whole Grain hamburger bun with your favorite toppings
