SHILOH FARMS Spelt Pitas are hearth baked with the wonderful old-world texture and taste. The "pocket" in pita bread is created by steam, which puffs up the dough. As the bread cools and flattens, a pocket is left in the middle. When removed from the oven, the layers of baked dough remain separated inside the deflated pita, which allows the bread to be opened into pockets, creating a space for use in various dishes. People fill the pockets with various ingredients to form a sandwich.

I was thrilled to find spelt pita available online, I am not finding it anywhere else. And it is a fine-quality pita and I will order it again! One thing I will mention--it does seem a teeny bit saltier than wheat pita bread, but still delicious. And I found that if I cut it in quarters, it also toasts beautifully.
