A member of the wheat family, rye has long lived in the shadow of its more famous cousin, but no longer. With its chewy texture, earthy, slightly spicy flavor, and rich nutritional profile, this versatile grain deserves to be admired and enjoyed in its own right!
As with other whole grains, SHILOH FARMS Rye Berries are a nutrient-rich source of fiber, protein, vitamins, and minerals (especially manganese, phosphorus, and magnesium). Longer and more slender than wheat, they naturally vary in color from a warm gold to a mellow green.
Rye is an especially hardy, resilient cereal grain, capable of being grown in soils and conditions inhospitable to wheat and other grains. As a result, it is widespread in Scandinavia, Northern Europe, Russia, and other harsh, colder climes, and is closely associated with regional cuisines. Traditional in breads, crispbreads, and fermented beverages, rye can be substituted for wheat, brown rice, spelt, or other grains in a wide variety of dishes, both savory and sweet.
To Cook: Sort* and rinse. Add 1 part grain to 4 parts water and bring to a boil. Cover, reduce heat, and simmer for 1-1½ hours, or until grain is tender. Drain excess water and serve. Soaking the grain overnight will shorten the cooking time.
Suggestions:
1. Substitute for brown rice, spelt, or other whole grains in salads, stuffings, and pilafs.
2. Grind into a flour to be used in baked goods like pancakes, muffins, and quickbreads. Substitute up to 30-40% of the wheat flour called for in a recipe.
3. Make classic pumpernickel or whole grain rye bread.
4. Add to soups, stews, and casseroles.
5. Serve as a hearty hot-breakfast alternative to oatmeal.

I purchased this rye grain back in December and have made three loaves of bread with it. It is very clean and fresh. The bread was very tasty! I have searched around all over the internet for good quality and value and I am thankful I found Shiloh Farms. I will continue to buy more items from them.

During the pandemic, I started baking rugbrod bread and use rye berries and ground rye berries to make it. Fabulous taste. Great sourdough bread!! Thank you Shiloh Farms!!

We are really enjoying using the rye grains as we would brown rice & instead of oats or cold cereal at breakfast. Fresh enough to have good mild flavor... & despite directions it actually cooks in same time as brown rice (this batch & for me at least!)

I'm diabetic and need more fiber, so I started buying organic whole grain. I make this rye just like rice and combine it with beans or meat. It freezes well, so I can make the whole bag and save some for later.
