Red Quinoa Burgers
Yields 6-8 servings
Ingredients:
2 Tbsp. olive oil
1/4 C. chopped onion
8 oz. fresh mushrooms, sliced
1 vegetable bouillon cube
1 C. Shiloh Farms Organic Red Quinoa or Shiloh Farms Organic Tri-Color Quinoa
2½ C. Shiloh Farms Organic Rolled Oats
2 C. cooked Shiloh Farms Organic Black Turtle Beans
2 egg whites
8 oz. salsa
1/2 C. fresh cilantro, chopped (optional)
Directions:
1. Preheat oven to 375°
2. Over medium-low heat, saute onions in olive oil until translucent; increase heat to medium and add mushrooms, cooking until softened
3. Meanwhile, add bouillon cube and 2 C. water to a saucepan and bring to a boil; stir in quinoa, cover, and simmer 10 minutes, or until quinoa is fluffy
4. In a large bowl, mix together oats, beans, egg whites, and salsa; use a spoon to partially mash black beans and create a homogeneous mixture
5. Add cooled quinoa, mushrooms, and cilantro and stir to thoroughly combine; press mixture into patties and place on foil-lined baking sheet
6. Bake for 8 minutes on one side, then flip and bake an additional 6 minutes
