Quinoa Pudding
Yields 4 servings


2 C. Shiloh Farms Organic Quinoa or PureLiving Organic Sprouted Quinoa, cooked
1 C. apple juice
1/2 C. Shiloh Farms Organic Golden Raisins
1/2 C. Shiloh Farms Organic Pecans (or other nut of choice), chopped
1 tsp. vanilla
1/2 tsp. cinnamon
1/4 tsp. Shiloh Farms Himalayan Pink Salt
zest of 1 lemon
juice of 1/2 lemon


1. Combine all ingredients in large saucepan and bring to boil; reduce heat and simmer 15 minutes, or until liquid is absorbed and raisins have plumped
2. Divide between individual dessert dishes and place in refrigerator to chill completely
3. Top with a sprinkle of cinnamon, fresh berries, or whipped cream and serve
