Quinoa Chicken Salad with Pecans & Raisins
Yields 4 servings
Ingredients:
4 C. cooked PureLiving Organic Sprouted Quinoa (or Shiloh Farms Organic Quinoa)
1 C. cooked chicken, shredded or cut into ½" cubes
½ C. Shiloh Farms Organic Pecans
¾ C. Shiloh Farms Organic Raisins
½ C. scallions, thinly sliced
½ C. fresh parsley, chopped
⅓ C. olive oil
¼ C. fresh lemon juice
2 Tbsp. soy sauce
2 tsp. Shiloh Farms Alfalfa Honey
½ tsp. fresh ground black pepper, or to taste
Romaine lettuce, washed & dried
Directions:
1. In large bowl, add oil, lemon juice, soy sauce, honey, and pepper; whisk together until well incorporated
2. Add quinoa, chicken, pecans, raisins, scallions, and parsley and toss; taste and adjust seasoning as needed
3. Chill salad for 1 hour to allow flavors to blend
4. Arrange lettuce on serving platter and spoon salad over; garnish with additional parsley if desired
Variations:
1. Substitute dried cranberries or chopped dried cherries for the raisins.
2. Try swapping the pecans with chopped walnuts or sliced almonds.
