Usage:
1. To use as a thickener, first dissolve starch in a small amount of water to create a slurry, then add to sauce and stir until thickened. Potato starch loses its thickening ability when boiled, so it is best added near the end of cooking time in hot dishes.

Let me tell you how happy I am: this to my knowledge is the only potato starch made in the U.S. that does not contain any sulfites, which my husband strongly reacts to. I bought this product after I had called customer service and was told the potato starch was guaranteed sulfite-free. I have since made both gluten-free bread and pizza using it, without my husband getting sick. I recommend it for all those out there who have issues with sulfites.

I've tried two other brands of potato starch, and this one has the best flavor (no aftertaste), and works beautifully in my gluten free biscuits (see GeniusKitchen.com gluten free biscuit recipe-- I change out the potato starch for cornstarch one-for-one.). The texture is great, and even freezes well.
My latest creations are adding a little melted ghee + coconut sugar + cinnamon in the bottom of a muffin pan, and dropping biscuit on top before baking. And- add biscuit mix to top of a "chicken pot pie".
Love this product!
