Ingredients:
2 Lemons, cut in half, squeezed and zested
2 Tablespoons freshly chopped thyme leaves
½ cup extra virgin olive oil
¼ cup white wine vinegar
1 (8) oz Shiloh Farms Mild Cheddar Goat Cheese, diced into cubes
1 clove garlic, minced
1 shallot, minced
1 teaspoon sugar
Season to taste with seat salt and freshly ground pepper
Directions:
In separate bowl, add minced shallot and white wine vinegar, let stand. Combine lemon juice, zest, olive oil, thyme and garlic. Stir to combine ingredients. Add shallots and vinegar. Place goat cheese in a bowl and spoon marinate over the top. Season with sea salt and pepper. Refrigerate and let marinate for up to 6 hours
Great served with greek olives and crackers
