Cinnamon Applesauce Muffins

Ingredients: 
1 cup SHILOH FARMS WHEAT GERM
1-1/2 cups Shiloh Farms Wheat Flour
2 tsps. Baking Powder
1/2 tsp. Baking Soda
3/4 tsp. Sea Salt
2 tsps. Cinnamon
1/8 tsp. Nutmeg
1 large Egg
1/2 cup Shiloh Farms Date Sugar
1/3 cup Vegetable Oil
1 cup applesauce
1/2 cup Soy or Rice Milk

Directions:    Heat oven to 425ºF
In large bowl, combine wheat germ, flour, baking powder, soda, salt, cinnamon and nutmeg. In separate bowl, beat egg with date sugar, oil, applesauce  and milk. Add to dry ingredients, mix until just moistened.  

Spoon into muffin tins. Mix 2 tsp of date sugar and 1/4 tsp cinnamon and sprinkle on top of muffins before baking.   Bake at 425ºF for 15-17 minutes.  Makes about 12 muffins.
