Decadent Chocolate Pudding
Yields 6 servings
Ingredients:
1/3 C. Shiloh Farms Organic Cocoa Powder
1 C. Shiloh Farms Organic Coconut Sugar
4 Tbsp. Shiloh Farms Tapioca Flour
1/4 tsp. Shiloh Farms Himalayan Pink Salt
4 C. low-fat milk
4 egg yolks
1/2 C. Shiloh Farms Allergen Free Dark Chocolate Chips or Allergen Free Mini Dark Chocolate Chips
1/2 tsp. vanilla extract
Directions:
1. In medium saucepan, whisk together cocoa powder, coconut sugar, tapioca flour, and salt
2. Slowly add milk while whisking to combine; add egg yolks one at a time, stirring after each addition to incorporate
3. Bring mixture to a simmer over medium-high heat, stirring constantly; reduce heat to medium-low and cook 2-5 minutes or until thickened, carefully scraping bottom and sides with whisk to prevent sticking
4. Remove from heat and add chocolate chips and vanilla extract; stir until chocolate has melted
5. Pour pudding into a medium glass bowl (if lumps remain, pour through a fine-mesh strainer); cover surface of pudding with plastic wrap to prevent a skin from forming
6. Refrigerate at least 2 hours before serving
Dairy-Free Variations:
• Substitute coconut, rice, or almond milk for the low-fat milk.
