2 cups Shiloh Farms Black-eyed Peas, rinsed, and soaked overnight
1 medium onion, finely chopped
6 slices Bacon, 1-inch or Ham, diced
1 teaspoon dry Mustard
add salt and freshly ground black pepper to taste
1/4 cup of grated fresh Ginger, or diced crystallized Ginger
3/4 cup Honey or Molasses
Directions:
Drain and rinse the beans; cover with fresh water and bring to a boil over high heat. Reduce heat and simmer for about 45 minutes, or until beans are tender. Add water to keep them from drying out.
Preheat oven to 325°. In a heavy skillet, cook bacon or ham over medium heat until meat is well cooked and drain off any excess grease. Saute onion until onion is golden. Then stir meat and onion into the beans. Add mustard and salt and pepper, to taste. Add ginger; combine well.
Turn into a 2-quart baking dish; drizzle with the honey or molasses. Cover and bake about 1 1/2 hours. Remove the cover the last 30 minutes to brown the top. Serves 4.
