1-1/2 cups of cooked Shiloh Farms Black-Eyed Peas
1/4 cup fresh Parsley leaves (tightly packed)
2 Tbsp. Fresh Lemon juice
2 Tbsp. Olive Oil
1-1/2 tsp. chopped Garlic
1/2 tsp. dried Tarragon
1/4 tsp. fresh ground Black Pepper
salt to taste
Directions: Reserve a few black-eye peas for garnish and place the remaining peas
in a food processor, along with parsley, lemon Juice, olive oil, garlic, tarragon and pepper.
Process until smooth. Taste and adjust seasonings. Transfer to a serving bowl and garnish
with the saved black-eye peas. Makes about 1 full cup. Serve with Shiloh Farms Pita breads,
or Sprouted breads. Great with crackers or chips. Enjoy.
