Oatmeal Raisin Cookies
Makes about 2 dozen cookies
Ingredients
1 C. butter, softened
1/4 C. coconut oil, room temperature
3/4 C. Shiloh Farms Organic Date Sugar
1/4 C. Shiloh Farms Organic Maple Sugar
1/2 C. Shiloh Farms Raw Alfalfa Honey
1 egg
1 C. all purpose, unbleached flour
1/2 C. PureLiving Organic Sprouted Spelt Flour
1 tsp. baking soda
2 tsp. ground cinnamon
1/4 tsp. ground allspice
1/2 t. Shiloh Farms Himalayan Pink Salt
3 C. Shiloh Farms Organic Rolled Oats or PureLiving Organic Sprouted Rolled Oats
3 Tbsp. whole milk
1 C. Shiloh Farms Organic Walnuts, chopped
1 C. Shiloh Farms Organic Thompson Seedless Raisins
Directions
1. Preheat oven to 375°
2. In large mixing bowl, cream together butter, oil, sugars, honey, & egg; set aside
3. In separate bowl, combine flours, baking soda, spices, & salt; add to butter mixture & stir until fully incorporated
4. Stir in remaining ingredients & mix thoroughly
5. Drop by the rounded spoonful onto cookie sheet, pressing each to flatten slightly
6. Bake at 375° for 8 minutes for a chewy cookie, or up to 12 minutes for a crispy cookie; allow to cool completely before serving
