Millet Pilaf
Yields 4 servings
This basic pilaf is a blank canvas, making it a great accompaniment to any number of more strongly-flavored dishes. Pair it with roasted meats, rich ragouts, or even spicy chili. Or, make it the star of the show by adding your choice of fresh herbs, dried fruits, and nuts.
Ingredients:
2½ C. vegetable or chicken broth
1 C. Shiloh Farms Organic Millet or PureLiving Organic Sprouted Millet
2 tsp. reduced-sodium soy sauce
1/4 tsp. Shiloh Farms Himalayan Pink Salt, or to taste
1/2 C. fresh parsley, chopped
Directions:
1. Combine millet and broth in large saucepan and bring to a boil; reduce heat, cover, and simmer 30 minutes, or until water is completely absorbed
2. Remove from heat and let steam, covered, an additional 10 minutes; taste and adjust seasoning as needed
3. Stir in parsley, then fluff with fork; serve immediately
