Lemon-Thyme Lima Bean Dip
Ingredients:
15 oz. Shiloh Farms Organic Baby Lima Beans, cooked
Juice of 1 large lemon
2 Tbsp. olive oil
1/4 C. minced onion
1/8 tsp. Shiloh Farms Himalayan Pink Salt, or to taste
1/4 tsp. black pepper, or to taste
1½ tsp. fresh thyme, chopped
Directions:
1. In food processor, blend together cooked lima beans and lemon juice
2. Add olive oil, onion, salt, and pepper; process until smooth
3. Add thyme and pulse twice; taste and adjust seasoning as needed
4. Serve alongside crackers and fresh veggies or use as a spread on sandwiches
