Easy Kasha Croquettes
Vegan Scrapple
SHILOH FARMS Kasha is buckwheat that has been lightly roasted, imparting a distinctly nutty flavor and crunchy texture. A traditional element of Jewish cuisine (where it is featured in dishes like knishes and kasha varnishkes), kasha is a versatile alternative grain that can be prepared as a cereal, used in pilafs, or added to soups and stews.
Despite what their name implies, buckwheat groats are actually unrelated to wheat. In fact, they are not technically even a grain, but rather the hulled seeds of the buckwheat plant. Naturally gluten free, buckwheat is one of the best plant sources of protein, containing 8 essential amino acids. It is also a great source of fiber, minerals (like manganese, copper, and magnesium), and B vitamins.
To Cook: Sort*, then add 1 part kasha to 2 parts boiling water, cover, and simmer 15-25 minutes, or until grain is tender and water is absorbed. Fluff with a fork and serve.
Suggestions:
1. Dress up cooked kasha with browned onions, parsley, and dill.
2. Try kasha as a filling for stuffed cabbage, or add to cabbage soup.
3. Substitute for rice or bulgur in pilafs, stuffings, and side dishes.
4. Prepare as a hot cereal by cooking in juice or milk, then add your choice of sweeteners, dried fruits, or nuts.
5. Cook kasha with egg and chicken or beef broth, then mix gently with chopped onions, celery, and mushrooms.

If you've never tasted authentic Russian or Eastern European Kasha this product from Shiloh is NOT it. A few years ago I was ready to give up trying to find and cook Kasha that was fluffy and flavorful, rather than the mushy, gloppy, unappealing blob I produced, when a friend took me to her Russian grocery store so I could try an imported brand from Russian she recommended (long before the Ukraine war, by the way). What an amazing difference! The buckwheat groats remained intact and separate after cooking, creating a delicious flavor and pleasing texture. Since I have enjoyed many other Shiloh grain products I thought I would give their Kasha a try (buy American, right?). After cooking one small batch I threw it all away. Still love Shiloh's other products.

Shiloh Farms does a great job overall and we have really enjoyed many of their products. Love the company, but not the Kasha. We tried having this for breakfast following instructions on the package. Tasted terrible. Happy that a few others enjoy it, but we will stick to other Shiloh Farms products.

I have purchased Shiloh Farms Kasha for years, and love that it's the cleanest around! Healthy, too! I buy it by the case, and eat it every day of the year!

I had been buying this by the pound at a major natural foods retailer, and they were OK.
This has a much more robust flavor.
A 1 to 4 ratio of Kasha to steel cut oats makes a fine meal.
