Hoppin' John

1½ c. SHILOH FARMS BLACK-EYED PEAS
1 lb. ham hocks
1 chopped onion
1/2 tsp. crushed red pepper
Sea salt & pepper
4 cups water
1½ c. Shiloh Farms Brown Rice
1 c. shredded cheddar cheese (optional)

Directions:
In large soup pot, combine peas, ham hocks, onion, red pepper, salt & pepper. Cover with water and bring to boil. Reduce heat to medium-low and simmer for 90 minutes.  Remove ham hocks and cut meat into pieces. Return meat to pot. Stir in rice, cover and cook until rice is tender, approx. 20-25 min. Season to taste. Sprinkle cheddar cheese over top, if desired. Serves 4-6.
