A classic chili bean, orca beans hold up well after long-cooking, producing a dark, rich broth that is almost as delicious as the bean itself. And you'll notice that they retain most of their signature black and white coloring even when cooked, making them a stunning addition to salads, pilafs, and pasta dishes.
Native to the Caribbean region, where they prefer the warm, moist climate, orca beans were first domesticated over 400 years ago. Through the ages, this petite heirloom variety has gone by a number of other names, too, including Calypso, Yin-Yang, and Vaquero.

To Cook: Sort* and rinse. Cover with water and soak overnight. Drain, then bring 2 cups fresh water and 1 cup beans to boil. Reduce and simmer 1-1½ hours, or until tender. Drain and serve.
Cold soaked and cooked at a very gentle simmer, beans should retain most of their nutrients.
Suggestions:
1. An excellent bean for hearty chilis, soups, and stews.
2. Add cooked beans to salsas, salads, or pasta dishes.
3. Puree cooked beans with fresh herbs and vegetables for a delicious spread or dip.
4. Pairs well with bacon, chilis, garlic, citrus, cumin, cilantro, and other robust flavors.
5. Combine with rice or other whole grains for complete plant protein.
