Naturally high in vitamins, minerals, and other essential nutrients, purple barley provides more zinc than lentils, more fiber than wheat, and more B Vitamins than white barley. Because the grain's tough, inedible outer hull is only loosely connected to the kernel, it naturally falls during harvesting (meaning additional processing to remove the hull is not required). As a result most of the bran and endosperm is left intact and the germ is present, making hulless barley is one of the most nutritious grains on earth!

To Cook: Sort* and rinse. Bring 1 part barley and 3 parts water to boil. Reduce heat and simmer, covered, until tender, approximately 40-50 minutes.
To reduce cooking time by about half, soak the grain 8-10 hours or overnight. Drain off soaking liquid, cover grain with fresh water, and proceed with cooking as instructed above.

1. Cook in fruit juice, then top with toasted nuts and fresh fruit for a hearty breakfast.
2. A favorite soup grain, barley is also a great addition to chili, stews, casseroles, and salads.

I will be buying Purple Hulled Barley again from Shiloh Farms. I like the product and they don't take FOREVER to get it out the door and to you.

We really enjoy this barley. It takes longer to cook if you don't want it as chewy, but the time is worth it. It is delicious for breakfast with thawed cherries and brown butter ghee. It is also good with roasted vegetables and golden raisins. It works well in soups and stews also.
I like to cook it with water and then add the cooked barley to dishes. We cook a large batch and keep it on hand to add texture and flavor to many dishes.

Very high in antioxidants, but is much tougher than regular barley. Guess that's the trade-off ;)
