Slow Cooker Hearty Chicken and Lentil Stew
Serves 6
Ingredients:
1 C. PureLiving Organic Sprouted Lentils or Shiloh Farms Organic French Lentils, sorted and rinsed
2 C. zucchini, chopped (about 1 medium)
2 C. butternut squash, peeled and chopped (about 1 small) or 2 medium sweet potatoes, chopped
½ C. onion, chopped (about 1 medium)
4 C. chicken broth
½ tsp. salt
¼ tsp. black pepper
1 lb boneless skinless chicken breast
1 can (28 oz) diced tomatoes, in juice
¼ C. fresh basil, chopped
Directions:
1. Place first 7 ingredients (through black pepper) in a 4-quart slow cooker; stir to combine
2. Add chicken breast; cover and cook on low setting for 6 hours
3. Remove chicken from slow cooker and transfer to a plate; use 2 forks to shred the chicken, then return to slow cooker
4. Stir in tomatoes; cover and cook on low setting another 15-25 minutes, or until thoroughly heated
5. Sprinkle with fresh chopped basil
