SHILOH FARMS Great Northern Beans are a delicately flavored white bean related to the kidney bean and the pinto bean. Their mild flavor and creamy texture makes them a versatile kitchen staple, suitable for use in a wide variety of dishes. The flavor of the Great Northern Beans is compatible with that of tomatoes, garlic, molasses, honey, mild vinegars, and mustard.
As with most beans, Great Northerns are typically high in protein and fiber. They are also an excellent source of potassium, magnesium, folate, iron, and calcium.
To Cook: Sort* and rinse beans. Add 1 part beans to 3 parts boiling water. Remove from heat, cover, and allow the beans to soak overnight. Drain and add 3 parts fresh water or stock (make sure the beans are completely covered by the liquid). Cover and bring to a boil, then reduce to simmer for about 2 hours, or until beans are softened to your liking. Drain and save excess cooking liquid for soup stocks. Season beans with salt, pepper, or other desired spices and serve.
Test frequently during cooking, then come to your own decision on when beans are tender and taste "done." Remember, intended use dictates desired tenderness. It is better to cook beans to a firm stage for salads, freezing, and longer-cooking recipes. If you plan to puree or mash the beans, cook until very soft.
Suggestions:
1. Great Northern Beans are classic soup beans, particularly ham and bean soup and minestrone.
2. Combine them with whole grain pasta, cream cheese, and mushrooms for a hearty main dish.
3. Add to pasta dishes, casseroles, or salads.
4. Puree cooked beans until smooth, then use in dips or to thicken soups, stews, and sauces.
5. They are excellent in baked bean recipes, and pair very well with barbecue flavorings.

The Shiloh Farms Great Northern Beans do not cook down to a soup, most of the beans stay intact. They have a delicious smell when cooked and they have substance.

Beans are organic and not mushy. They are flavorful.

These beans are not mushy like store bought beans when you cook them. They are flavorful and I believe it is because they are organic and non GMO.

Have been buying beans from Shiloh Farms for four years and counting. They are good and easy to make into many dishes. Just remember the kombu seaweed at the end of the cooking to get the beans nice and plump. If desired, you can remove the kombu before eating the beans but the kombu adds more nutrients.
