Fiber Rich French Toast
Yields 6 servings
Ingredients:
2 C. skim or 1% milk
1 egg
2 tsp. ground cinnamon
1/3 C. maple syrup
1 C. Shiloh Farms Organic Oat Bran
12 slices Shiloh Farms Organic Sprouted Grain Bread of choice
butter or oil for cooking
Directions:
1. In shallow bowl, beat together milk, syrup, and egg
2. In separate shallow bowl or plate, combine oat bran and cinnamon
3. Dip bread in egg mixture, then in cinnamon-oat bran mixture, coating both sides
4. Cook in large skillet with melted butter over medium heat until golden brown on both sides
5. Serve with syrup or fresh preserves
