Dark Chocolate Truffles
Ingredients:
12 oz SHILOH FARMS Allergen Free Dark Chocolate Chips
1 C. heavy cream
SHILOH FARM Organic Cocoa Powder
Optional:
SHILOH FARMS Organic Coconut, toasted
SHILOH FARMS Organic Hazelnuts, toasted and chopped
SHILOH FARMS Spelt Pretzels, crushed
Directions:
1. In a small saucepan, heat the cream over medium heat until small bubbles just begin to appear around the edge of the liquid (cream should be hot, but not boiling)
2. Add chocolate chips to a heat-proof bowl; pour hot cream over the chocolate and slowly whisk together until the mixture is smooth
3. Pour chocolate mixture into 8x8 glass or metal baking dish; refrigerate until cool about 1-2 hours (chocolate should be set, but not solid)
4. Using a spoon or small melon baller, scoop the chocolate into 1tsp.-sized portions and roll by hand into balls
5. Roll each ball in cocoa powder, coconut, hazelnuts, or pretzels (or coating of choice); place on parchment-line sheet pan and refrigerate
6. About 15 minutes before you are ready to serve, remove from refrigerator to allow truffles to soften slightly
