CHEWY ALMOND COOKIES
INGREDIENTS:
3 Tablespoons butter
1 Cup packed brown sugar
1 Egg, large, room temperature
1/4 Teaspoon vanilla extract
1/4 Teaspoon almond extract
1 and a 1/2 cups Shiloh Farms Almond Flour [item # SFM545]
1/4 teaspoon baking soda 1/4 teaspoon ground cinnamon
1/2 Cup Shiloh Farms Sliced Almonds [item # SFM577]
DIRECTIONS:
1. In a large bowl, beat butter and brown sugar until crumbly. Then beat in egg, vanilla extract, and almond extract.
2. In a separate bowl, combine almond flour, baking soda and cinnamon.
3. Slowly add dry mix to the wet mix, and continue mixing until well combined.
4. Shape into two 6 inch rolls; wrap and refrigerate overnight.
5. Preheat over to 350° and grease your baking sheets.
6. Unwrap dough and cut into 1/4 inch slices. Place 2 inches apart on baking sheets and sprinkle with slicked almonds.
7. Bake 7 to 10 minutes, or until lightly browned. Cook for a few minutes before removing from baking sheets to a cooling rack.
Allow to cool completely and enjoy! Store in an airtight container.
