Cherry-Orange Poppy Muffins

Ingredients:
2 C. PureLiving Organic Sprouted Spelt Flour
¾ C. Shiloh Farms Organic Date Sugar
1 Tbsp. Shiloh Farms Organic Poppy Seeds
½ Tbsp. baking powder
¼ tsp. Shiloh Farms Himalayan Pink Salt
1 egg, lightly beaten
1 C. milk
1/4 C. butter, melted
1 tsp. vanilla
½ C. Shiloh Farms Organic Sour Red Cherries, chopped
3 Tbsp. orange zest
Directions:
1. Preheat oven to 400 °
2. In a large bowl, combine the first five ingredients (through salt)
3. In a separate bowl, combine egg, milk, butter, and vanilla; add wet ingredients to the dry and stir just until moistened
4. Stir in cherries and orange zest
5. Fill 12 paper-lined muffin cups about ¾ full; bake in preheated oven 18-20 minutes
6. Remove from oven and allow to cool 10 minutes in pan before removing to a wire rack to cool completely
