Bulgur Wheat Salad with Peaches & Blackberries
Yields 4 servings
Ingredients:
1 C. Shiloh Farms Organic Bulgur Wheat
2 Tbsp. olive oil
zest of 1 lime
2 Tbsp. fresh lime juice
2 tsp. Shiloh Farms Alfalfa Honey
½ tsp. Shiloh Farms Himalayan Pink Salt, or to taste
½ tsp. fresh ground black pepper, or to taste
4 peaches, diced
1 C. blackberries
½ C. fresh basil, chopped
4 C. arugula, rinsed
4 oz. feta cheese, crumbled
Directions:
1. Cook bulgur according to package directions; drain & set aside to cool
2. While bulgur is cooking, combine oil, zest, lime juice, honey, and seasoning in large bowl; whisk to incorporate
3. Add cooled bulgur, fruit, and basil and toss; adjust seasonings as needed
4. Serve bulgur salad over bed of arugula and top with crumbled feta
