Smaller (generally no more than ¼" in diameter) and plumper than green varieties, SHILOH FARMS Brown Lentils have a rich, nutty flavor and complex nutritional profile that belies their petite size. To Cook: Due to their small size, lentils cook much faster than dried beans and do not require pre-soaking. To cook, first sort* and thoroughly rinse lentils. Add 1 part lentils to 2 parts water and bring to a boil, then lower heat to simmer. Cook until tender, about 30-45 minutes.
Lentils must not be overcooked or they will become soft and mushy. Test frequently during cooking, then come to your own decision when they are tender and taste "done." Remember, intended use dictates desired tenderness. It is better to cook lentils to a firm stage for salads, freezing, and longer-cooking recipes. If you plan to puree or mash the lentils, cook until very soft.
Suggestions:
1. Because they have similar cooking times, lentils are often cooked with rice.
2. Lentils go well with most vegetables and are a great addition to soups, stews, and salads.
3. Lentils are frequently cooked with traditional Indian spices for curries.
4. Their exceptionally high protein content makes lentils a perfect choice for vegetarian dishes; try them as a base for veggie burgers.

I have purchased many brands of lentils to include bulk and these are by far the freshest and tastiest. I usually sort my beans and lentils to remove any foreign objects such as small gravel and dirt. On occasion I've even found weevils in the bulk lentils. But Shiloh's are very clean; I never find any foreign matter and you can see and taste the freshness. I'm sticking with this brand for future purchases of lentils.

I have been buying the brown organic lentils for some years now. Over the years, I have found minimal debris in the lentils. They always cook well and taste great! A quality product!
