Beef & Lentil Vegetable Stew
Makes 6 servings
1/2 lb. grass-fed ground beef
1/2 large onion, chopped
3 cloves garlic, minced
2 stalks celery, chopped
3 carrots, chopped
1½ C. PureLiving Organic Sprouted Lentils or Shiloh Farms Organic Brown Lentils
3 C. vegetable broth
2 C. crushed tomatoes
1/2 tsp. ground black pepper
1/2 tsp. Shiloh Farms Himalayan Pink Salt
1 tsp. dried oregano
Directions:
1. In large skillet, brown beef, onion, and garlic; drain off excess grease
2. Combine beef and all remaining ingredients in large pot and bring to boil; reduce heat to medium and simmer 1-1½ hours, or until vegetables and lentils are tender
