Autumn Brittle
Ingredients:
2 C. Coconut Sugar
½ C. Shiloh Farms Raw Alfalfa Honey
1/4 tsp. Shiloh Farms Himalayan Pink Salt
1 C. water
1 Tbsp. butter
1 C. Shiloh Farms Organic Whole Almonds, toasted
1 C. Shiloh Farms Organic Whole Cashews, toasted
½ C. Shiloh Farms Organic Domestic Pumpkin Seeds, toasted
½ C. Shiloh Farms Organic Cranberries
½ C. Shiloh Farms Organic Golden Sultana Raisins
Directions:
1. Heat sugar, honey, salt, and water in large pot over medium-low heat (use a pot that is larger than you think you will need, since mixture will foam and increase in size as it heats)
2. Continue to heat mixture, stirring frequently, until it reaches a temperature of 310°F (use a candy thermometer to get accurate temperature; this is very important, as mixture must reach 310° in order to properly harden as it cools); this may take up to 1 hour
3. While sugar mixture is cooking, fit 9x13 pan with well-greased sheet of parchment paper; set aside
4. After sugar mixture reaches 310°, turn off heat and allow to cool to 302°, then immediately stir in butter, nuts, seeds, and fruit; stir until well-coated
5. Immediately pour mixture onto parchment and spread into large rectangle using rubber spatula
6. Place pan in refrigerator and allow brittle to cool 1 hour; once cooled, remove from parchment and break into pieces
