Apple Butter Spice Muffins

Ingredients:
Batter:
1 3/4 C. PureLiving Organic Sprouted Hard Wheat Flour
1/3 C. Shiloh Farms Organic Date Sugar
2 tsp. baking powder
1/2 tsp. ground cinnamon
1/4 tsp. Shiloh Farms Himalayan Pink Salt
1/4 tsp. ground nutmeg
1/8 tsp. ground allspice
1/8 tsp. ground ginger
1 egg, lightly beaten
3/4 C. milk
1/4 C. olive oil
1 tsp. vanilla
1/2 C. Shiloh Farms Apple Butter
Topping:
1/2 C. Shiloh Farms Organic American Native Pecans, chopped
3 Tbsp. Shiloh Farms Organic Maple Sugar
Directions:
1. Preheat oven to 400 °
2. In a large bowl, combine the first eight ingredients (through ginger)
3. In a separate bowl, combine egg, milk, vanilla, and oil; add wet ingredients to the dry and stir just until moistened
4. Fill 12 paper-lined muffin cups with a rounded tablespoon of batter; top each with a rounded teaspoon of apple butter and then fill evenly with remaining batter
5. In a small bowl, combine topping ingredients; sprinkle over muffins
6. Bake 15-18 minutes; cool 10 minutes in pan before removing to a wire rack to cool completely
