Almond-Crusted Tilapia

Almond-Crusted Tilapia
Yields 4 servings

Ingredients:

½ C. SHILOH FARMS Organic Almonds, finely chopped
¼ C. PURELIVING Organic Sprouted Quinoa Flour
4 6oz Tilapia Fillets
½ tsp. SHILOH FARMS Himalayan Pink Salt
¼ tsp. ground black pepper
2 Tbsp. butter
2 Tbsp. olive oil
½ C. SHILOH FARMS Sliced Almonds

Directions:

1. Combine chopped almonds and quinoa flour in a shallow bowl; set aside
2. Season fillets evenly with salt and pepper; dip each in almond mixture until coated
3. In large heavy skillet, melt butter with olive oil over medium heat; add fish and cook 4 minutes on each side, or until golden
4. Remove fillets to serving plate
5. Add sliced almonds to skillet and toast, stirring often, 1-2 minutes, or until golden; sprinkle toasted almonds over fish and serve

Variations:
1. Instead of cooking on the stovetop, bake fish in a 400° oven for about 3-5 minutes.
2. Substitute catfish, flounder, or salmon for the tilapia.
