Ingredients:
3 cups Shiloh Farms Dried Sour Red Cherries
1 Cup Shiloh Farms Date sugar or 2/3 c. of Honey
3 Tbsp. Quick-cooking Tapioca
1/2 tsp. Almond extract
Pastry dough for 2-crust, 9-inch pie
2 Tbsp. Butter
Directions: Preheat oven to 375°F
Soak cherries in 1 cup water for about 15 min. and then drain and save liquid. Combine cherries, sugar, tapioca and almond extract and mix well. Line a 9-inch pie plate with pastry; fill with cherry mixture. Dot with butter. Add top crust, cutting slits for steam to escape.
Bake in a preheated 375°F oven 50 to 55 minutes, or until crust is golden brown and filling is bubbly. YIELD: 8 SERVINGS
