Brown Rice Apricot Delight

1 Tbsp. Butter, melted
1 Tbsp. minced Onion
1 cup Shiloh Farms Brown Rice
2 cups Chicken stock or (2 cups of water with chicken boullion cubes)
1/2 cup Orange juice
1/4 cup Shiloh Farms Raisins
1/4 cup SHILOH FARMS TURKISH APRICOTS, chopped
1/4 cup Shiloh Farms Pine Nuts (or slivered almonds or sunflower seeds)
Several pinches of chopped fresh mint or dried chopped scallions for garnish

Directions:

Melt butter in saucepan. Add minced onion and rice. Stir until rice is coated, over low heat.   Add chicken stock or (chicken bouillon with 2 cups of water), and orange juice.

Add raisins, orange peel and chopped apricots.

Bring to a boil. Cover and reduce heat to low. Simmer about 45 minutes or until rice is tender and liquid is absorbed.

Stir in mint and pine nuts. Put in serving dish. Sprinkle with chopped scallions. Serves 6.
